Little Moons are frozen and chilled mochi, a fusion of Eastern and Western cuisine – soft and chewy rice flour dough wrapped around balls of ice cream, cheesecake, or chocolate ganache to create a distinctive, bite-sized, and delicious dessert that’s bursting with flavour.

 

Their rollout across Europe has been pioneered by sister and brother duo Vivien and Howard Wong, who founded Little Moons in 2010.  The product’s roots are in high-end restaurants, but over the last five years retail packs have swept the ice cream category in grocery and food service.

 

The business has rapidly established mochi, and snacking ice cream across Europe. In FY22 we generated more than £50m in revenue, and in FY23 we are targeting +50% YoY growth.  Based on experience in the USA, mochi ice cream is likely to make up 2-3% of the total ice cream category within 1-2 years.

The Role:

 

At Little Moons, we believe that good business means being good to both people and planet. We’ve made strides in living up to that belief but are now seeking a dedicated and knowledgeable Environmental Coordinator to join our growing business.

 

The ideal candidate will be responsible for monitoring, measuring, and driving down the environmental impact of our manufacturing operations. You will need to be atop of environmental regulations and best practices, with the ability to ensure compliance and drive continuous improvement in environmental performance.  You will be the voice of our environmental impact and an advocate for operational change.

 

Key Responsibilities:

 

  • Develop and implement comprehensive environmental management systems, policies, and procedures to minimise the environmental impact of the company operations.
  • Conduct regular environmental audits and inspections to identify potential areas of non-compliance or improvement and develop action plans to address them.
  • Monitor and report on key environmental performance indicators, such as energy consumption, waste generation, and water usage, and identify opportunities for efficiency improvements.
  • Support the company's waste management programme, including waste characterisation, recycling initiatives, and the proper disposal of hazardous materials.
  • Stay up to date with relevant environmental regulations, legislation, and industry best practices, and ensure compliance across all levels of the organisation.
  • Conduct environmental risk assessments for new projects, processes, and products, providing recommendations for mitigating potential environmental risks.
  • Ensure compliance with environmental regulation and other environmental reporting requirements.
  • Participate in the development and execution of our broader Sustainability Strategy, such as carbon footprint reduction, water conservation, and renewable energy utilisation.
  • Support the development and implementation of environmental awareness campaigns and initiatives to engage employees and promote environmental stewardship.

 

Essential Requirements:

 

  • Passion for the environment and making positive change.
  • Bachelor’s degree in Environmental Science, Environmental Management, or a related field, or comparable experience in the workplace. Existing Nebosh or IEMA certification is desirable.
  • Practical experience in environmental management, ideally within the food manufacturing industry or a similar sector.
  • Sound knowledge of environmental regulations, legislation, and industry best practices.
  • Familiarity with environmental auditing and reporting processes.
  • Excellent data management and numerical analysis
  • Strong practical problem-solving skills, with the ability to identify and address environmental risks and opportunities.
  • Excellent communication and interpersonal skills, with the ability to collaborate effectively with cross-functional teams.
  • Detail-oriented and highly organised, with the ability to manage multiple priorities and deadlines.
  • Proficient with Microsoft Office 365 software's.
