Food Technologist

Little Moons are frozen and chilled mochi, a fusion of Eastern and Western cuisine – soft and chewy rice flour dough wrapped around balls of ice cream, cheesecake, or chocolate ganache to create a distinctive, bite-sized, and delicious dessert that’s bursting with flavour.


Their rollout across Europe has been pioneered by sister and brother duo Vivien and Howard Wong, who founded Little Moons in 2010. The product’s roots are in high-end restaurants, but over the last five years retail packs have swept the ice cream category in grocery and food service.


The business has rapidly established mochi across Europe and will exceed £50m in revenue in FY21/22. Based on experience in the USA, mochi ice cream is likely to make up 2-3% of the total ice cream category within 1-2 years.

The Role


This is a very exciting opportunity for an experienced and driven Food Technologist to join our team. This role is factory-facing; you will be focused on running trials and creating processes for both NPD and EPD.


  • Delivery of accurate and up-to-date food packaging data to fulfill business commitments and legal obligations
  • Work with our product development and procurement teams to implement ingredient changes that enhance or don’t impact consumer perceptions, ensuring continuity and efficiency of supply
  • To be the business expert on key manufacturing processes and key product attributes such as organoleptic, quality, and rheology and how they are related
  • Work closely with cross-functional teams to launch high-quality products which will work within the factory and are delivered to critical paths
  • Support development and roll-out of new packaging formats
  • Complete internal audits to validate data accuracy
  • Work closely with OEMs on new equipment trials and selection
  • Understand and interpret information for non-technical colleagues
  • Troubleshooting issues highlighted during trials, working closely with Production and Engineering colleagues to find solutions
  • Reporting of factory trials, pre-production trials, and support during product launches
  • Responsible for checking pack descriptions, compliant ingredient declarations with nutritional guidelines, and labeling legislation for different markets
  • Writing and updating the QAS Library, as required
  • Be up to date with industry knowledge on legal requirements
  • Support preparation for BRC audit by carrying out supplier and raw material risk assessments including vulnerability
  • Act as a mentor to help upskill current employees


Candidate Profile


  • Graduate in a food science/technology
  • 4+ years of experience in a food technologist role (for a BRC-certified company)
  • Understanding of food labeling and declaration (up-to-date knowledge of food regulations)
  • Strong technical track record in the food production industry
  • Understanding of food safety and HACCP within a factory and how NPD/EPD can affect this
  • Experience in working with high-risk/chilled/frozen foods
  • Experience working with comparable products /ingredients is advantageous
  • Self-motivated and excellent communicator
  • Team player with a flexible and positive approach
  • Assume accountability for their work and deliver to agreed timescales
  • Outstanding attention to detail and ability to work under pressure to meet deadlines
  • Lead by example, and have the energy and enthusiasm to overcome and find solutions to challenges that come with a rapidly growing company
  • Experience working with exports to different global markets is a benefit
